Tortilla Soup (aka Cheesy Chicken Enchilada Soup)

I'm trying to do better about blogging so today I'm going to share one of my favorite recipes with you:

Tortilla Soup aka Cheesy Chicken Enchilada Soup

1 can Rotel Tomatoes
1 can Red Enchilada Sauce
2 cans Cream of Chicken Soup
2 cans Chicken broth
4-5 cooked Chicken Breasts, shredded

1 Lb. Velveta cheese, cubed

Mix together canned items and simmer on stove top. Add Velveta cubes and stir often until melted. Add milk if too thick. Add chicken when soup is smooth. Serve over totilla chips (or fritos, if preferred).

(NOTE: my family likes more chicken in the soup so I use at least 6 chicken breasts.   I put my Rotel through the blender so it's not chunky.)

Etched...Upon My Heart: What We Learn and Why We Never Forget by Jill Kelly

New York Times best-selling author Jill Kelly shares deeply personal experiences as a mother trying to make every moment count, against the backdrop of trying circumstances, in Etched....Upon my Heart: What We Learn and Why We Never Forget.  "This book is everything I hope my daughters eventually learn, always remember, and never forget.  It's everything I would share with you, woman to woman and mother to mother."

The following is quoted from Amazon:

"Every Christian parent today wrestles with the challenge of how to raise kids in a God-honoring, morally sound way. In ETCHED . . . UPON MY HEART, Jill Kelly offers up the unforgettable episodes of her life-some sorrowful, others filled with joy-as a "living epistle" to her daughters. For the many other Christian mothers who also long to pass on their hard-won knowledge of God's steadfast love and healing grace to their children, Kelly's down-to-earth reflections provide an inspiring example.

As she writes, "God will break our hearts, but He will hold the pieces. He will cradle us and redeem every tear we cry." Although great personal pain-her young son Hunter's death, her husband's infidelity-informs these pages, Kelly's story is ultimately one of forgiveness, reconciliation, and hope. Through the moments in time that Jill Kelly recounts, readers will recognize the daily reality and eternal value of God's plan for their own lives."
